Tomato, Bean, and Tuna Salad

Time to make: 5-10 min

Servings: 1-2

 

Simple to prepare and easy to eat. Great for lunch on the go. Or a light evening meal or side dish

Ingredients

  • 1/3 can butter beans
  • 1 small tin tuna
  • 1 tomato chopped
  • 1/4 cucumber quartered and sliced
  • Zest and juice of 1/2 lemon
  • Small serving of mesculin or small lettuce leaves
  • 1 tablespoon olive oil
  • Optional add a sprinkle of chilli if you like

Directions

Put all ingredients in a container with airtight lid, refrigerate and combine well.

Serve as lunch or light option or side dish at dinner
