Simple to prepare and easy to eat. Great for lunch on the go. Or a light evening meal or side dish
- 1/3 can butter beans
- 1 small tin tuna
- 1 tomato chopped
- 1/4 cucumber quartered and sliced
- Zest and juice of 1/2 lemon
- Small serving of mesculin or small lettuce leaves
- 1 tablespoon olive oil
- Optional add a sprinkle of chilli if you like
Put all ingredients in a container with airtight lid, refrigerate and combine well.
Serve as lunch or light option or side dish at dinner
